Tropical Green Smoothie

I made this smoothie at least once a week and bring it in a water bottle for breakfast. Though green smoothie recipes are a dime a dozen these days, I’ve yet to find one I like more than this one!

Imagine drinking a piña colada poolside in Mexico. Then, picture a super healthy smoothie packed with spinach and chia seeds. Sound like polar opposites, right? Not so much.  When the smoothie craze hit my senior year of high school, I set out to make a green smoothie. I’ve been playing with smoothie recipes ever since but have come to accept that I never ever will be able to top this one and really have no desire to.

BEST FOR- days you want a fruity, tropical smoothie that also packs in the nutrients.

MUSICAL PAIRING- “Sound of Sunshine” by Michael Franti 

INGREDIENTS

(serves 1)

  • 1 cup fresh spinach
  • ½ cup frozen mango
  • ½ cup frozen pineapple
  • ½ tsp. vanilla extract (optional)
  • 1 tsp. chia seeds
  • 1 cup coconut water or milk (unsweetened)
  • 2 ice cubes (optional– really only if it needs to be colder)

DIRECTIONS

Add all ingredients into blender/ magic bullet. Enjoy!
