So I recently had this drink at Palmer’s in San Francisco that was essentially a pineapple margarita. It was amazing and I could have drank 12, except it obviously was alcoholic and that’s terrible for both my body and soul. But the seed was planted, and it got me thinking. What could I recreate that would taste just as delicious but I **could** actually drink all day and night long?
Enter: the pineapple tajin sparkler.
Ingredients:
(Serves 1)
- 1 tsp tajin
- 1/2 of a lime
- 1 large ice cube
- 4 oz sparkling water (ty @sanpellegrino_us)
- 2 oz 100% pineapple juice*
- Could add a shot!**
Directions:
- Pour tajin on a plate. Rim your glass with the lime half, then roll the rim of the glass in the tajin.
- Place ice in your glass. Pour in your sparkling water, then pineapple juice. Squeeze the lime half into the glass. You’re done, enjoy!
Notes:
* I used a Dole’s 100% pineapple juice can which you can find at any grocery store, Target, etc but you could also use freshly juiced pineapple!
** I’d recommend vodka!
