Oatmeal 2.0

Yes, I realize oatmeal is incredibly easy and the package already comes with instructions. This recipe will make you realize how much better oatmeal can be if you beef up those instructions!

I feel like oatmeal is the most underrated of all the breakfast foods. It has a rep for being boring, but with the right toppings and preparation it’s easily one of my favorites.

This recipe is super easy so I feel kinda silly posting it but the slight variations on the normal preparation of oatmeal (ex. boiling the oats in almond milk and water rather than just water + the additions of certain spices & toppings) make this oatmeal 2.0 worth a recipe.

BEST FOR- breakfast, lunch, dinner – or anytime you want a quick, easy, hot snack!

INGREDIENTS
(serves 1)

½ cup almond milk
¼ cup water
¼ cup quick cook steel cut oats
2 strawberries, cut into small pieces
5 almonds, finely chopped
1/3 a banana, cut into slivers then quartered
1 tsp chia seeds 
a spoonful raw crunchy almond butter
a handful of blueberries
a drizzle of honey
a pinch of cinnamon
a pinch of nutmeg
salt

DIRECTIONS

  1. Bring the almond milk and water to a boil in a medium-sized pot (the oatmeal may bubble up so you want to make sure the pot is tall enough/has high enough sides).
  2. Add in the oatmeal, salt, cinnamon, and nutmeg. Reduce heat, cover and cook for 10-15 minutes, stirring regularly (actually stir though because it’ll bubble over like crazy).
  3. While cooking, cut up banana, strawberry, and almonds.
  4. Take oatmeal off stove and put in bowl. Add desired toppings. I did (in order) almond butter, banana, strawberry, blueberry, almonds, chia seeds, then honey.
  5. Enjoy!
