I know I’ve been on a weeklong hiatus but yesterday was my dad’s birthday and I figured I may as well come back with a bang. I’ve seen pictures of caprese salad “sandwiches”on Pinterest and Buzzfeed for awhile now, but never got around to making one. I now realize I simply didn’t have the proper occasion. They’re way to pretty and cool for a solo dinner alone salad. Yet, the wow factor was perfect for a home cooked birthday dinner and my dad was stoked by the presentation.

INGREDIENTS
(serves 4)
4 large beefsteak tomatoes
8 oz. mozzarella cheese
5 large sprigs of basil (or more, to taste)
6 oz. asparagus
salt & pepper
olive oil & vinegar
DIRECTIONS
Slice tomatoes and mozzarella. A good rule of thumb is about a centimeter but you can just look at my picture if that helps. Pick basil off vine.
Chop asparagus into pieces (see picture for sizing). Pan sear with olive oil for approximately 5 minutes
Layer basil, mozzarella, and asparagus in between tomato. Place mozzarella between each tomato slice, and alternate placing the asparagus and basil on top of the mozzarella slices.Season with salt, pepper, olive oil, and vinegar. Enjoy!
