Citrus Vinaigrette

A great light and refreshing side to make any salad taste like summer! Easy to make and even easier to store in the fridge.

Homemade salad dressing technically only lasts 2-3 days in the fridge so I figured I’d make a new one today as it’s been a few days since the avocado vinaigrette. A bunch of the Meyer lemons growing in my backyard are ripe so a citrus vinaigrette seemed perfect. 

BEST FOR- adding to light summer salads, like this one

MUSICAL PAIRING- “Girls” by the 1975

INGREDIENTS

¼ cup fresh orange juice
¼ cup fresh Meyer Lemon Juice (see note)
¼ cup minced shallots (approx. 1 shallot)
½ cup olive oil
salt + pepper to taste

DIRECTIONS

Pour orange and lemon juices, shallots, salt, and pepper in glass or bowl. Whisk together. Slowly pour in olive oil while continuously whisking so that it forms an emulsion. If not serving immediately, cover and refrigerate.

NOTES

If using normal lemons instead of Meyer lemons, add 1 tbs of honey and whisk together with the juices before adding the olive oil.
