Many years ago my friend and I had an amazing salad, and I’ve been meaning to recreate it ever since. The other day, someone on the Food Network made something similar, and I figured that meant it was about time to try.
BEST FOR- a light lunch or yummy starter on a sunny day (or a foggy day like today that you’d like to convince yourself is sunny). Works super well with this dressing.
MUSICAL PAIRING – “Everyday” by Vetiver
INGREDIENTS
(serves 4)
1 small watermelon, cut in 1-inch chunks
6 cups baby arugula
½ cup feta cheese
1 cup mint leaves
½ cup kalamata olives
dressing (click here for recipe)
DIRECTIONS
Place all ingredients in large bowl. Toss. Add dressing. Toss again. Enjoy!
