Tahini Soba Week

Meet your two new best friends, tahini and soba!

I bet you didn’t realize these were the pantry staples you’ve been missing! Before you roll your eyes at me, these are easy to find. Trader Joe’s has great tahini and Safeway/Lucky’s/Target etc. all carry soba and nori in their Asian sections. Also, for those still stumped on “tahini” – if you eat hummus, you likely have tahini every single time! Sometimes the ingredients we’re needing to spice up our routine cooking are hidden in plain sight. And thankfully, after this week you’ll realize they’re very easy to cook with!

Your grocery list for the week:

Asterisks note things I suggest having on hand always as kitchen staples!

Produce
  • 2 lemons*
  • 1 baby or 1/2 full sized bok choy
  • 2 handfuls small mushrooms*
  • 2 cloves garlic*
  • 1/4 cucumber
  • 1 handful broccoli florets *
  • 2 handfuls preferred greens*
  • 1 avocado
  • 8 spears asparagus
Oils/ herbs
  • 1 jar of tahini
  • Soy sauce*
  • Maple Syrup*
  • Cooking oil (e.g. avocado, canola, oil)*
  • Salt & pepper*
  • Rice vinegar (you’ll need ~1/2 cup)
baking supplies
  • Granulated sugar (~1.5 cups)*
  • Vanilla extract*
  • Flour (~1 cup)*
  • Baking soda*
  • Baking powder*
Eggs/ Dairy/Protein
  • 1/2 cup unsalted butter (1 stick)
  • 2 eggs
  • 12 large shrimp (I used frozen, pre-cooked)
Misc.
  • 1 package soba noodles
  • Sushi rice (don’t skimp and try regular rice)
  • 5 sheets of nori
  • Optional- wasabi
  • 1 can chickpeas
