I’m a huge fan of salads for lunches and using leftovers in unexpected ways. I had extra soba noodles and maple tahini sauce from my Asian pasta (have you tried yet??), but wanted an easy way to get greens in for lunch. Behold, this 15 minutes maple tahini soba greens bowl.
Ingredients:
(Serves 1)
- 1/2 cup soba noodles
- 1/4 cucumber, sliced
- 1 handful broccoli florets, chopped small
- 2 handfuls baby kale/ preferred greens
- My maple soy tahini sauce (see notes if haven’t made)
Directions:
- Cook soba noodles according to package— could also use rice noodles. Chop broccoli, kale, and cucumber. Throw together in bowl with my maple soy tahini sauce and enjoy cold!
Notes:
If you didn’t make the sauce with me: mix 1/6 cup tahini with 1 tbs each of soy, maple syrup, and warm water. Drizzle in lemon juice and whisk with fork. AND GO TRY MY ASIAN PASTA ASAP.
I buy my tahini at Trader Joe’s which makes it super easy. Other fan favorites (from my Googling) seem to be Soom Foods and Al Arz.
