Some people love football, others love snacks. Both groups will love these two-ingredient ice cream football sandwiches. They’re a surprisingly easy way to make game day a lot tastier. You truly only need cookie dough & ice cream. It almost feels like cheating to publish as a recipe 🙂
Also, just because these are footballs does not mean you can’t let your imagination run wild. This recipe can be a base for any festive cookie you desire – Easter, Thanksgiving, Christmas, back to school… the possibilities are endless!
Ingredients:
(Makes 10 ice cream sandwiches)
- 1 pack Pillsbury Football Sugar Cookies
- ~7 oz vanilla ice cream (think half a small carton)
Directions:
(Total time: 20 minutes)
- Pre-heat oven, and bake cookies according to instructions.
- Transfer immediately from the hot cooking sheet to a cookie rack or plate to speed up the cooling process.
- Once cool, lay out 10 cookies, upside down. Top each with a scoop of vanilla ice cream, then gently press another cookie on top to form a sandwich.
- Pop back into the freezer for a few minutes to solidify, and enjoy!
Notes:
If you want to make these ahead of time, wrap each in plastic or beeswax before popping them back into the freezer (step 4).
