Green Bean Casserole

A lightened up version of the classic… that you’ll actually like!

I make this every Thanksgiving as my signature dish. Most people hate green bean casserole & nothing brings me joy like having them try my lightened-up version and realize they love it (and then be shocked it’s dairy-free!).

Now, before you knock it and say that you’ve tried green bean casserole before and know you simply don’t like it, let me disclaim: I am not a casserole person. In any form. Unless it’s this specific green bean casserole. So even winning myself over was a leap, but everyone I’ve made this for agrees: they love green bean casserole when it’s this one!

Ingredients:

(Serves 4-6 as a side)

  • 1 lbs green beans, trimmed (~5 cups)
  • 8 oz sliced cremini mushrooms (~2.5 cups)
  • 3 garlic gloves, minced
  • 1/2 red onion, minced
  • 1/2 tsp dried rosemary
  • 1 tbs soy sauce
  • 2 tbs flour
  • 3/4 cup vegetable broth
  • 1 cup unsweetened, plain almond milk
  • 1.5 cups fried onions
  • Salt and pepper

Directions:

(Total time: 40 minutes)

  1. Preheat oven to 400F, and do your prep! Wash and trim your green beans, slice your mushrooms, and mince your red onion.
  2. Bring a large pot of salted water to boil and cook your green beans for 4 minutes. Immediately remove from heat, strain, and run under cool water*
  3. Heat olive oil over medium in a large, oven safe skillet* over medium heat. Add garlic, onion, dried rosemary, salt and pepper. Cook for 2 minutes, then add the mushrooms and soy sauce. Cook for 4 more minutes.
  4. Sprinkle with flour, and stir, cooking for one minute as it mixes in with the veggies. Add vegetable broth, stirring to mix in, followed by the almond milk. Bring to a simmer, then turn hit to low and cook for up to 7 more minutes until thickens.
  5. Add half cup fried onions and your green beans. Mix to coat with mushroom sauce, and remove from heat. Top with another half cup fried onions and bake for 15 minutes.
  6. Top with your final half cup fried onions, and serve immediately!
