
Not sure what to do with tahini besides make sweet potato boats? 👋 Homemade hummus. It’s easy, it’s pantry friendly, and it’s super versatile. I’ll be making lemon and dill since that’s what I have on hand, but you could make this with just the garbanzos and tahini (two non-perishables), or with garlic, lemon, cilantro, beets, sun-dried tomatoes, red peppers… the possibilities are endless.
Ingredients:
- 2 cans chickpeas
- 1/2 cup fresh lemon juice
- 1/3 cup chopped fresh dill (or other herb)… this was like 10 sprigs for me
- 5 tbs tahini
- 1/2 tsp turmeric (optional)
- Dash of salt and pepper
- 2 tbs water (if needed) to thin
Directions:
Pop everything in your food processor or blender, and blend till smooth (several minutes). Add water to thin as needed. However, note, this will thicken a bit as it sits, so I’d recommend going tablespoon by tablespoon so you don’t end up with hummus soup. Enjoy!
